  • Any body have any good carrot recipies?

    Hey there, soI have a lot of let over carrots. (Baby carrots.) From making soup the other night, so what are some good recipies I can make?
    I need recipies please.

      I like to just saute them in some butter and brown sugar. Get your skillet hot enough to carmelize them, then turn it down to simmer to get them tender

      Boil them until just soft and put butter on them with a sprinkle of brown sugar. Yum!

      Carrot Souffle’.

      If you have never had one you don’t know what you are missing.

      There are different versions of this Souffle’. I use a recipe from the 1996 Southern Living Cookbook.

      Use ask.com and type in Carrot Souffle’. You will find different versions plus the famous one that Piccadilly has here in the South!

      Glazed carrots with basalmic vinegar
      A really nice and flavorful way to serve your carrots

      3 C carrots, sliced if large
      6-8 cloves garlic sliced or slivered
      2 tbsp olive oil
      1/4 C basalmic vinegar
      salt and pepper to taste

      Saute the garlic and carrots together in the olive oil until the carrots are cooked through and a bit browned. You may want to cover the pan and cook on low heat for 10 minutes or so. Then add the vinegar, and increase the heat and stir carrots until most of the vinegar has evaporated, leaving the carrots and garlic coated. Salt and pepper to taste.

      boil until soft-yet firm ,drain , add some-heavy cream and enough velveta pepper-jack or mexican style cheese low-heat until bubbly and melted salt and pepper to taste , this is a great side for rice-or-pasta not to mention a great snack try it with a crisp sandwich -you’ll forget the chips !!
